Look! A salad!

I promised I would get off frying food for a bit.. so here I am with fresh greens for you. Plus a creamy dressing. Baby steps, okay?!

I am on a crusade to demolish 9 pounds of apples from our apple picking adventure a few weeks back and this is another step in that direction.

This salad has some of my favorite components:

  1. Cold chopped greens
  2. Salty Bacon
  3. Sweet cranberries
  4. Toasted walnuts
  5. Fresh, crunchy apples
  6. Funky blue cheese, if you're into that
  7. Creamy poppy seed dressing

Give her a try and enjoy while sitting outside with a cool breeze in your face and colored leaves falling around you... or imagine this if 80 degrees is still your reality, UGH. NO. WHY? HELP.

Autumn Chopped Salad with Creamy Poppy Seed Dressing

Serves 4-5


Ingredients

Creamy Poppy Seed Dressing

1/2 cup mayonnaise
2 tablespoons sour cream
1 tablespoon poppy seeds
1 teaspoon lemon juice
2 tablespoons apple cider vinegar

Salad

5 baby romaine lettuce heads, chopped
2 apples, peeled if you want, cored and chopped
1/4 cup cranberries
1/4 cup walnuts, chopped and toasted
4 pieces of bacon, cooked and chopped
Blue cheese, crumbled

Instructions

  1. First, make the dressing by mixing all the ingredients together. Store in an air-tight container in the refrigerator. It will keep for about a week.
  2. Toss greens with a bit of dressing and top with toppings. Give another mix and add a bit more dressing as needed.

Say a prayer for cooler weather to strike the East coast, because I am about 7 months pregnant and still SWEATING, and dig in.
