We can't talk about Football Party Food, or any party food for that matter, without talking about our dear, dear friend guacamole.

I've known many a guacamole in my time and there are few I haven't enjoyed. Mostly because it goes so nicely with a very large margarita but also because it's a great vehicle to eat a lot of chips and I'm into that.


I have to thank my stepmom, Ginger, for slinging delicious guacamole for as long as I can remember. She always makes it fresh at family gatherings and is probably why I turn my nose up at that wholly guacamole green mush in the store.

Guacamole is so stinkin' easy to throw together with a few ingredients and if you want to get real crazy with it, load it up like we're doing here.



I have a simple guacamole base that I always use and then add to that depending on what I'm in the mood for or have on hand.

To put together a delicious guac always start with ripe avocados, lime and lemon juice (I swear by both), salt, cilantro, red onion and tomato. Jalapeño is also a staple but I tend to leave out heavy spice since my kids eat guacamole by the spoonful.

Today we're loading up with charred corn, roasted jalapeño, smokey bacon and crumbled cotija cheese. ¡Arriba!



Have a couple of margaritas for me, or just any alcohol in general (miss you, wine) and dig in!


Loaded Guacamole

Serves as many lucky souls as you'd like


Guacamole Base

4 ripe avocados
Juice of 1/2 lemon
Juice of 1 lime
2 tablespoons cilantro, finely chopped
Salt, to taste
1 large tomato, seeded and diced
1/2 red onion, finely chopped


4 pieces of bacon, cooked and chopped
1 ear of corn, grilled
1 jalapeño, roasted or grilled
Cotija cheese, crumbled


  1. Make your guacamole base. Mash avocados and mix with lemon juice, lime juice, salt and cilantro. Add the red onion and tomato and mix again.
  2. Top with chopped bacon, charred corn, jalapeño and crumbled cheese. Serve with chips, veggies or just stick your face in it.
