I did something, kinda nuts.

It is not lost on me that this is the very first dessert I have made and posted for this little bloggity blog, so I went a little cray when dreaming up the most delicious thing I could share with you.

Also, it's Monday and I feel like we all need this right now.

Josh and I had a dessert like this at a local resturant called The Point and it was insane.

I couldn't stop thinking about it. It was, and still is, one of the yummier treats I had in a long while.

So, obviously, I had to recreate it at home.

Sidenote: If you're local to the Annapolis-Baltimore area and haven't visited The Point, the water views, bar and menu are very worth the trip.

This dessert is a bit involved just because it has a few different components to it that take some time. Time mostly being waiting for ice cream to freeze and dipping cookies in chocolate.

If you don't have the time or effort to make the whole ice cream sandwich sha-bang, then nix the cookies and go for just the ice cream here. Because it.is.bomb.DIGGITY.

It's 5 ingredients. No ice cream machine required. And absolutely delicious. So creamy, salty and sweet with chunks of peanut butter througout. Mmmmmm, GEWD.

For the cookie of the sandwich, it's just a simple shortbread cookie dipped in melted chocolate. Very straight forward and also yummy all on it's own.

Chocolate Nutty Buddy Ice Cream Sammy


Ingredients

Peanut Butter Ice Cream

2 cups cold heavy whipping cream
1 14oz can sweetened condensed milk
1/3 cup sugar
1 tablespoon vanilla
1 18oz jar creamy peanut butter

Chocolate-dipped Shortbread Cookies

1 cup unsalted butter, soft
1/2 cup sugar, plus more for rolling
1 teaspoon vanilla
2 cups all purpose flour
1-2 cups semi-sweet chocolate chips
Vegetable oil

Sandwich Assembly

Peanut butter, to spread
Roasted, salted peanuts, chopped

Instructions

  1. For the ice cream, whip cream in a large bowl until stiff peaks form. It helps if your mixer parts and bowl are cold as well. Combine the condensed milk, sugar, vanilla and two-thirds of the peanut butter jar in a large bowl. Mix well and add to the whipped cream bowl. Blend until smooth. Pour into a loaf pan. Using a butter knife, swirl the left over peanut butter through the ice cream mixture. Freeze for at least 6 hours.
  2. For the cookies, cream butter and sugar until light in color and fluffy. Add the vanilla and mix. Add the flour one cup at-a-time and mix until combined. Roll into balls and cover in sugar. Place on a greased cookie sheet and flatten with your fingers a bit. Bake at 350˚. I made my cookies larger than average so they could make a large ice cream sandwich, so mine cooked for longer, about 14-16 minutes. For average size cookies, bake 10-15 minutes. Just look for the golden brown color, especially around the edges. Cool completely.
  3. Melt the chocolate in a double boiler and add a teaspoon of vegetable oil at-a-time, stirring well after, until the chocolate is thin enough for dipping. My batch used about 3-4 teaspoons of vegetable oil. Using two forks or other kitchen utensils, dip your cookie into the chocolate bowl (you can do this over the double boiler so the chocolate stays melty) and flip until all sides are covered in chocolate. Place on a parchment covered plate or cookie sheet. Repeat until all cookies are covered. Place in the fridge to set the chocolate.
  4. When all your components are ready, assemble your sammy! For one ice cream sandwich, take two chocolate covered cookies and spread peanut butter on the inside of each. Place a large scoop of ice cream on the bottom cookie. Place the other cookie on top and cover the ice cream sides in chopped peanuts. Take a step back and admire all the hard work you just did to create something so beautiful. So beautifully DELICIOUS.

Tip: If you want to make some sandwiches ahead of time, wrap them in parchment paper and place in the freezer for later.

Other ways to enjoy these scrumptious treats: dip the cookies in the ice cream and peanuts, make an open-faced ice cream sandwich topped with peanuts and more chocolate sauce, make a multi-level cookie-ice-cream-tower and devour with friends. Use your hands, use a fork, use your face. It doesn't matter. Just get after it.
